北盘江光唇裂腹鱼肌肉营养成分的性别和性成熟差异分析及营养价值评价

Gender and sexual maturity differences in muscle nutritional components and evaluation of nutritive value in Schizothorax lissolabiatus from Beipan River

  • 摘要: 【目的】 探究珠江水系北盘江光唇裂腹鱼肌肉营养价值及其性别和性成熟的营养差异性,为其肉质营养研究和人工饲料研制提供科学依据。【方法】 以北盘江上游30尾野生光唇裂腹鱼为试材,采用化学分析方法测定其肌肉常规营养成分、氨基酸组成和脂肪酸含量,进行肌肉营养价值评价,并比较分析其未达性成熟个体与性成熟个体之间、雌性个体与雄性个体之间肉质营养的差异性。【结果】 北盘江光唇裂腹鱼肌肉常规营养成分中水分、蛋白质、脂肪和灰分的平均含量分别为78.43%、16.95%、3.37%和1.00%。肌肉中共检测出18种氨基酸,以谷氨酸含量最高、色氨酸含量最低。18种氨基酸、10种必需氨基酸、4种鲜味氨基酸总含量均较丰富,平均值分别为79.14%、36.99%和25.63%,支芳值平均为1.96。肌肉富含赖氨酸,必需氨基酸含量与氨基酸总量、非必需氨基酸含量比值分别为0.47和0.91,符合联合国粮食及农业组织/世界卫生组织(FAO/WHO)提出的模式标准(0.40左右,0.60以上),必需氨基酸指数(EAAI)较高,平均值为66.20,蛋白质质量优。色氨酸为第一限制性氨基酸,缬氨酸和异亮氨酸为第二限制性氨基酸。肌肉中共检测出26种脂肪酸,包括9种饱和脂肪酸、8种单不饱和脂肪酸和9种多不饱和脂肪酸,以油酸、棕榈酸、十六碳一烯酸和亚油酸含量较高。不饱和脂肪酸中,以单不饱和脂肪酸、亚油酸、n-3多不饱和脂肪酸(n-3 PUFA)含量较高;不饱和脂肪酸与饱和脂肪酸含量比值(∑PUFA/∑SFA)、n-3 PUFA与n-6多不饱和脂肪酸含量比值(∑n-3PUFA/∑n-6 PUFA)较高,平均值分别为0.87和0.13。肌肉常规营养成分水分、灰分、蛋白质及脂肪含量在未达性成熟个体与性成熟个体之间、雌性个体与雄性个体之间均无显著差异(P>0.05)。肌肉蛋白质营养价值以雄性个体优于雌性个体,鲜味以未达性成熟个体优于性成熟个体、雌性个体优于雄性个体。未达性成熟个体肌肉中单不饱和脂肪酸和花生四烯酸含量显著低于性成熟个体(P<0.05,下同),但必需脂肪酸和n-6 PUFA含量显著高于性成熟个体,雌性个体肌肉中n-3 PUFA和二十碳五烯酸(EPA)含量显著低于雄性个体。【结论】 北盘江光唇裂腹鱼肌肉具有低脂肪的特点,蛋白质、脂肪酸营养价值高,肉质风味佳,为优质食用经济鱼类。

     

    Abstract: 【Objective】 To investigate the nutritional value of Schizothorax lissolabiatus muscle in the Beipan River(Pearl River System), and the nutritional differences related to gender and sexual maturation, which could provide scientific basis for research on muscle nutrition and development of artificial feed. 【Method】 Using 30 wild Schizothorax lissolabiatus samples from the upper reaches of the Beipan River as experimental materials, chemical analysis methods were employed to determine the conventional nutritional components, amino acid composition, and fatty acid content of their muscle tissue. A comprehensive evaluation on the muscle nutritional value was conducted, followed by a comparative analysis of the differences in muscle nutrition between sexually immature individuals and sexually mature individuals, as well as between female individuals and male individuals. 【Result】 The results showed that the average contents of water, protein, fat and ash among the conventional nutritional components in Schizothorax lissolabiatus muscle were 78.43%, 16.95%, 3.37% and 1.00% respectively. A total of 18 amino acids were determined in the muscle, glutamate was the most abundant but tryptophan the least. The total contents of 18 amino acids, 10 essential amino acids and 4 delicious amino acids in the muscle were high with averages of 79.14%, 36.99% and 25.63% respectively, and the F value of the muscle averaged 1.96. The muscle was abundant in lysine. The ratios of essential amino acids contents to total amino acids and nonessential amino acids contents were 0.47 and 0.91 respectively, which matched the standards proposed by the Food and Agriculture Organization of the United Nations/World Health Organization(FAO/WHO), being arourd 0.40 and above 0.60 respectively. The essential amino acid index(EAAI) was relatively high, with an average of 66.20, and the protein quality was excellent. The first limiting amino acid was tryptophan, and the second ones were valine and isoleucine in the muscle. The contents of 26 fatty acids including 9 saturated fatty acids, 8 monounsaturated fatty acids and 9 polyunsaturated fatty acids were determined in the muscle, and the contents of oleic acid, palmitic acid, hexadecaenoic acid and linoleic acid were obviously higher. Among the unsaturated fatty acids, the contents of monounsaturated fatty acids(MUFAs), linoleic acid, and n-3 polyunsaturated fatty acids(n-3 PUFA) were relatively high. The ratios of polyunsaturated fatty acids to saturated fatty acids (∑PUFA/∑SFA) and n-3 PUFA to n-6 PUFA (∑n-3 PUFA/∑n-6 PUFA) were also high, with average values of 0.87 and 0.13 respectively. No significant differences were observed in the conventional nutritional components of muscle—including moisture, ash, protein and fat content—between sexually immature individuals and sexually mature individuals or between female individuals and male individuals(P>0.05). Regarding muscle protein nutritional value, male individuals exhibited superior quality compared to female individuals, while sexually immature individuals had better umami levels than sexually mature ones, and female individuals showed higher umami levels than male individuals. In sexually immature individuals, the contents of MUFAs and arachidonic acid were significantly lower than in sexually mature individuals(P<0.05, the same below), whereas essential fatty acids and n-6 PUFAs contents were significantly higher than sexually mature individuals. Additionally, muscle in female sexually mature individuals had significantly lower n-3 PUFAs and eicosapentaenoic acid(EPA) content than male sexually mature individuals. 【Conclusion】 The muscle of Schizothorax lissolabiatus contains low content of fat and high nutritional value of protein and fatty acids, as well as good flavor, and therefore Schizothorax lissolabiatus is an edible economic fish with high quality.
