移动式烤房关键参数及配套烟叶烘烤工艺优化

Optimization of key parameters and matched tobacco leaf flue-curing technology for mobile curing barns

  • 摘要: 【目的】 探究移动式烤房关键参数及配套烘烤工艺,为移动式烤房的推广应用提供理论依据。【方法】 设计建造6个不同材质、规格和能源类型的移动式烤房,筛选综合性能最佳的移动式烤房;以传统密集烤房烘烤工艺为对照组,设3个不同的移动式烤房烘烤工艺处理组,分析不同烘烤工艺对烤后烟叶经济性状、感官质量和生化指标的影响,筛选最优移动式烤房配套烘烤工艺;对筛选出的最佳移动式烤房与传统密集烤房进行烘烤效果比较。【结果】 以聚氨酯材料建造并采用U型包边方式的生物质烤房综合性能最佳,保温性较好。与传统密集烤房烘烤工艺相比,采用最优移动式烤房配套烘烤工艺的烤后烟叶上等烟比例显著提高15.8%(P<0.05,下同),均价显著提升4.2元/kg,香气物质总量显著提高37.29%,蛋白质含量显著降低5.46%,而氨基酸含量显著提高10.61%;同时,在最优移动式烤房配套烘烤工艺下,烤后烟叶的感官质量评价总分达82.1分,较传统密集烤房烘烤工艺显著提高。与传统密集烤房相比,移动式烤房的烘烤成本显著降低18.75%,烤后烟叶的上等烟比例显著提高87.50%,青杂率显著降低26.67%,感官质量评价总分显著提高0.6分。【结论】 采用聚氨酯材料建造的移动式烤房安装便捷且综合性能最佳,采用优化后的移动式烤房配套烘烤工艺能促进烟叶内在物质转化,提高烤后烟叶感官质量,有效改善烟叶内在质量。相较于传统密集烤房,移动式烤房能在提高烟叶品质的基础上降低烘烤成本,具有良好的推广应用前景。

     

    Abstract: 【Objective】 To explore the key parameters and matched flue-curing technology of mobile curing barns, aiming to provide theoretical basis for the promotion and application of mobile curing barns. 【Method】 Six mobile curing barns with different materials,specifications and energy types were designed and constructed,and the one with the best overall performance was selected. Using the traditional bulk curing barn flue-curing technology as the control group,3 treatment groups with different mobile curing barn flue-curing technologies were established. The effects of different fluecuring technologies on the economic traits,sensory qualities and biochemical indexes of the flue-cured tobacco were analyzed to identify the optimal flue-curing technology for mobile curing barn. A comparison of the flue-curing effects between the selected optimal mobile curing barn and the traditional bulk curing barn was conducted. 【Result】 The mobile curing barn constructed with polyurethane material and U-shaped galvanized spray-painted edges exhibited the best overall performance,with good thermal insulation properties. Compared with the traditional bulk curing barn flue-curing technology,the best matched curing technology for the mobile curing barn significantly increased the top quality tobacco proportion by 15.8%(P<0.05,the same below),significantly raised the average price by 4.2 yuan/kg,significantly increased the total content of fragrance substances by 37.29%,significantly decreased the protein content by 5.46%,and significantly increased the amino acid content by 10.61%. Meanwhile,under the optimal mobile curing barn flue-curing technology,the sensory quality score of the flue-cured tobacco leaves reached 82.1 points,which was significantly higher than that of the traditional intensive bulk curing barn flue-curing technology. Compared with the traditional intensive curing barn,the mobile curing barn significantly reduced the curing cost by 18.75%,significantly increased the top quality tobacco proportion by 87.50%,significantly reduced the green and mixed rate by 26.67%,and significantly improved the sensory quality score by 0.6 points. 【Conclusion】 The mobile curing barn constructed with polyurethane material is easy to install and offers the best overall performance. The optimized flue-curing technology for the mobile curing barn promotes the transformation of internal substance in the tobacco leaves,enhances the sensory quality of the flue-cured tobacco leaves,and effectively improves the intrinsic quality of the tobacco leaves. Compared with the traditional bulk curing barn,the mobile curing barn not only improves the quality of the tobacco but also reduces the cost of flue-curing,demonstrating strong potential for widespread application and promotion.
